Menu Challenge: Pumpkin Chili, Raw Spring Roll salad, and GF Quiche

We have decided to try new recipes on our days off over the winter. We started this week, during a few vacation days, with this yummy Raw Spring Roll salad with peanut dressing (almond butter). 


We also made GF Quiche and Pumpkin Chili. I will post the recipes during my next days off! 

I have started hunting for new ideas for next week! So far my favorite finds are on All Recipes and My Fitness Planner.
